This week on ITK with Coach Dave we bring you Enchilada Stuffed Peppers!
Stuffed peppers can be a healthy, delicious and satisfying meal. Add some enchilada sauce and it gives it a mexican style flare that sends this recipe over the top!
You can get creative here too, try using chicken, beef, pork or shrimp!
TIP: If you want to save some time in the prep, just dice the peppers and saute all the ingredients in the pan instead of baking the peppers. Eliminating the baking step doesn’t change the flavor, it saves you a ton of time… Granted, it may not look as pretty, but it’s all getting eaten anyways!
